Vegetarian Spinach Lasagna

1/2 pkg lasagna, cooked

1 bunch spinach, coarsely chopped

mix together
1/2 jar organic spaghetti sauce
1 whole garlic, chopped
1/2 c. fresh basil, chopped
1/2 c fresh oregano, chopped
1 pound cottage cheese
1 large egg, lightly beaten
1/2 can chopped olives

1/3 pound cheddar cheese, grated or cut up fairly fine

layer the four together, cover with cheddar
I pile this high, because the spinach shrinks

bake at 375 for about 30-45 minutes

this will keep a few days in the frig
I freeze the leftover spaghetti sauce

This sounds... not too difficult to make!  I can do this?...!

I've been trying to add a few veggie recipes I can eat for a few days to my repertoire.  Thanks Lorae!

Here's another easy one:
Potato cheese cakes

mash up boiled potato.  add eggs, grated cheddar cheese, salt, pepper, chopped parsley and mix well; make into patties, fry in cooking oil, brown on both sides.

it was yummy smile i used alfredo sauce because that's what i had, not spaghetti sauce, but it was yummy.
